2.kg Pears ( smaller size pears are good for this recipe)
1 lemon
1 orange
2 tsp black peppercorns (lightly bruised)
1 tsp pimento berries (lightly bruised)
4 cm piece ginger, peeled and sliced
500 mL apple cider vinegar (raw, organic, homemade if possible)
500 mL red wine vinegar
2 cinnamon quills
1 kg brown sugar or 2 cups of honey plus 2 cups water
Method
Zest the orange and lemon and place in your Fowlers Preserving Pan with all ingredients, except the pears and simmer on a low heat until the sugar / honey is dissolved.
Peel and halve the pears (remove the cores if desired), and simmer for 5 minutes. Switch off the heat and allow to sit for a further 5 minutes before packing into a warmed # 20 Bottles. Top up with liquid, leaving a 12 mm head space free from fruit and liquid. Add spice pieces, seal with ring, lid and clip and process in your Simple Natural Preserving Kit for 60 minutes.
