Lemon & Mint Dressing

Yield 2 x #14 Bottles


600 mL olive oil

2 cups fresh mint leaves

4 lemons

4 cloves garlic


Wash and dry mint and lemons.

Place 2 cups of mint leaves onto a Clean-A-Screen, juice the lemons & reserve juice. Julienne the skin and place onto a Clean-A-Screen.  Dry lemon and mint in your Dehydrator until well dried.

Heat olive oil carefully in a saucepan on the stove with the very well dried  mint & lemon ( approx 5 minutes), allow to cool to infuse .  Carefully whisk in the dried garlic and lemon juice.

Pour into clean # 14 Fowlers bottles, leaving a 5 cm head space.  Seal with ring, s/s lid and clip and process for 60 minutes in your Simple Natural Preserving Kit.  Refrigerate once opened.
