2 L water
60 small pickling onions- peeled
2.7 L malt vinegar
300 mL water
3 tbsp brown sugar
1 1/2 tsp mustard seeds
3 bay leaves
3 whole allspice
3 tsp black peppercorns
For this recipe you will need 3 Fowlers # 31 bottles.
Bring the water and salt to the boil, then peel the onions.
Once the water has boiled pour into a bucket & cool.
Place all the peeled onions into the cool water ensuring
they are submerged (place a small plate upside down to
submerge them if necessary) then leave them for 24 hours.
Wash the # 31 bottles. Bring to the boil the vinegar and water
then divide equally into the bottom of each jar the brown sugar,
mustard seeds, cloves, bay allspice & peppercorns.
Add the onions, add the vinegar( be careful not to heat shock
your bottles). Seal with ring, lid and clip and process in your
Simple Natural Preserving Kit for 60 minutes.
