Pears with Wattleseed

Australian native wattleseed infuses the pears with a delectable chocolate flavour, if you don't have access to wattleseed, cardamom pods (2) and a few saffron threads per bottle work beautifully too.


Pears ( approx 6 per #20 bottle)

1 tbs honey

1 tbs wattleseed or

3 saffron threads &

2 cardamom pods, bruised

2 tsps lemon juice 



Peel Pears and cut into quarters or halves.  Pack into # 20 bottles, add honey,  wattleseed & lemon juice. Top up with water leaving a 12 mm headspace free from fruit & liquid. Seal with rind, lid and clip and process for 60 minutes in your Simple Natural Preserving Kit or as per preserver type.
