Tamarillo Chutney

Ingredients

2 kg tamarillos

1 kg onions

2 tsp salt

1 tsp cayenne

250 g grapes dried in your Fowler Dehydrator (or store bought raisins)

3 large apples

1 kg brown sugar (coconut sugar also works well)

1 tsp cloves - toasted and ground

1 cinnamon stick

1 tsp pink peppercorns crushed

1 L apple cider vinegar

Method

To remove the skins make a small cross in the end opposite to the stem.  Place in stainless steel bowl & pour over boiling water, drain, add cold water and  peel.

Cut tamarillos into thin slices.  Place in Fowlers Preserving Pan with all other ingredients & bring to boil.  Simmer gently, uncovered for 1 1/2  -2 hours, stirring occasionally.  Pour into # 20 bottles, seal with rings lid and clip and place into your pre-heated Preserving Kti (so as to not crack your bottles) and process for 45 minutes.
