Jam between biscuits

Ingredients

220 g plain flour
224 g unsalted butter
2 large eggs
250 g coconut sugar
6 g Bicarbonate of soda
10 mL white vinegar
30 g honey
100g icing sugar for dusting
Jar of fig jam

Method

1.     Mix together the flour and butter until it forms crumbs.
2.     Separately whisk together the eggs and sugar. Blend into the flour mix.
3.     Mix together the vinegar and bicarbonate of soda. Add to the flour blend.
4.     Fold through the honey and bring together.
5.     Wrap the dough in cling film and rest in the refrigerator for 30 minutes.
6.     Roll out on a floured surface to 4mm thick
7.     Cut 5cm discs and tray up.
8.     Bake 180C for 5-8 minutes until the biscuits are a light golden brown
9.     Cool completely and spread the base of a biscuit with your beautiful fig jam
10.  Top with another biscuit.
11.  Dust with icing sugar
